
This week was the easiest and quickest recipe yet, being great for meal prep as it was delicious over the following two days. The recipe called for pre-made spinach ravioli, while adding the other ingredients would fool anyone that the meal was not made from scratch. In just 15 minutes from when I got home, I was eating dinner, with little to no prep ahead of time beyond slicing the Kalamata olives in half. I strayed slightly from the recipe as I chose Spinach and Feta ravioli for my base, which I had never tried before. I love feta and hoped it would add to the Mediterranean flavour of the dish, which it absolutely did. I had never had sundried tomato before trying this dish, which introduced a new flavour to my diet that I liked and would like to incorporate more through more recipes.
The protein from this meal came from the nuts and the beans, being a great alternative form of protein with great taste and a great texture against the softer ravioli and sundried tomato. Even my brother really enjoyed the different flavours, who is usually a very picky eater. He added chickpeas into his portion, which added a more salty taste that I liked. I see a lot of potential for this recipe to add in different ingredients and maybe some balsamic vinegar and I am excited to try this recipe again. I found that this was not only a great source of protein but also kept me full, which I was not expecting as I had a notion that the vegetables in the dish would not be enough to keep me full. Having some carbs in the pasta made a big difference, without making me feel gross by being heavy, as I find that the meat ravioli is too much for me. This recipe left me feeling very good, and I thoroughly enjoyed the different flavours in this recipe. It makes for a very easy and quick opportunity to fulfill my craving for Mediterranean food while getting good carbs, alternative protein, and some vegetables. Next time, I would be interested to even make the ravioli from scratch, which I have never done before. My uncle loves making ravioli, though. I hope that next time I am with him for dinner, I can make this recipe for him with his help to make the ravioli.
Next, we are shifting gears and will move to Japanese cuisine, which I am very excited about. I am especially very eager to make teriyaki tofu, as I love teriyaki dishes and am very interested to try tofu. The dishes call for many new ingredients I have never tried before, and I hope to find new flavours I can incorporate into my diet to make my meals more satisfying.
