
I was incredibly excited to make this dish this week! While it certainly was not the quickest recipe to put together, it was delicious and a great dish to have in the following days.
I made this on Sunday night, so time was not a huge issue as I could prep as early as I wanted to, and this dish in the future would have to be one that I make on the weekend and then enjoy throughout the week as a meal prep, as it took about two hours from starting to sitting to eat. It was delicious hot and cold, and the eggplant kept me full.
I cooked eggplant in a whole new way today, which was slightly intimidating ahead of time. Especially dipping and coating them was a new experience, but I did not find it challenging. It showed me a whole new way to cook with eggplant and the possibilities of it, making me wonder how else you can cook with it.
Again, I had all but eggplant and ricotta cheese ahead of time, so this was not an expensive recipe for me to make. I can see how this would get expensive if I were buying every ingredient, which is something to keep in mind as I consider this a weekly dish.
I would say that this is perhaps one of the favourite dishes I have made, but I do have to consider this as a practical and constant meal prep. It was incredibly flavourful, and its Italian flavours were prevalent. My parents also enjoyed this meal and commented on how filling it was. I was excited about his recipe as I love lasagna but find it too heavy, especially as I want to turn to alternative protein sources. This recipe is delivered in flavours that resemble lasagna while being more plant-based.
This was the last recipe of my project, so now I am going to look back on the many different delicious recipes I made to consider their practicality as I put together a final takeaway. They were each even better than I was expecting, and have left me with a lot to think back on. I have grown a lot in my cooking since beginning this inquiry process while enriching my diet with more variety and culture than I would have thought I could prepare a few months ago. It has been an incredibly valuable and rewarding experience, and I look forward to taking the highlight recipes with me into the future!
